Try It Out! Taste by Niche

Taste by Niche is a small-plates and classic-cocktails joint, that recently took over the Veruca bakeshop location in Benton park. Local mixologist Ted Kilgore heads up the drinks program (One of Kilgore's best recipes is in Food & Wine Cocktails 2008). As for the food, Craft has created an innovative menu in which all entrees can be cooked on a hibachi, induction burner or in an immersion circulator—that’s it! The small places include appetizers on toast (spicy pork meatballs with radish and parsley) and on sticks (grilled escolar with pineapple and pepperoni). There is also pork liver and foie gras pâté in crocks and maybe a porchetta for slicing. Craft is even smoking his own country hams in the kitchen! With only about 18 seats at the wooden communal table and bar, space will be tight. Get there early! It’s sure to be the hottest spot in town.

The famed cocktail menu is broken down by taste and ingredients: tart, bright and citrus, tart, spiced and savory, rich, dark and bold, crisp, light and aromatic, full, dark and robust, Taste’s Take on Tiki, punches, pitchers and bowls, Favorite Classic Concoctions, and Friends of Ours. The four bartenders also include their drink preferences on the menu, just so guests know the most popular sips!

Say “Oui!” at Brasserie by Niche

Teleport yourself to the streets of Paris at Chef Gerard Craft’s Brasserie by Niche. The chic French café seeks to perfect simplicity — with the roast chicken, steak-frîtes, croque-madame and other items that you'll find at dozens of brasseries across France. Each evening also features a "plat du jour," which at times features Braised rabbit and quenelles (dumplings) of pike lobster.

Brasserie by Niche is reviving the popularity of French fare in St. Louis with spot-on renditions of bistro-style steak frites, onion soup and croque madame. The relatively short menu stays approachable by avoiding French terms unless there’s not an English translation (for example, in the case of pike quenelles with lobster, mushrooms and shrimp) or the French name just sounds better (tender, wild Burgundy escargots).
